We love cocktails.

Both the Spiced and the 1808 Barely Legal make great base spirits to make classic cocktails with.

Here are some suggestions.

Dongara Stormy

A Dongara twist on a ‘Dark & Stormy’ this drink is one for adventurous fans of ginger beer.

Ingredients:  40ml Spiced // 80ml ginger beer // 20ml lime Juice // 2 lime wedges //2 dashes of bitters // Sprig of mint // Ice cubes

How To Make: Take a Highball glass. Squeeze lime wedges and drop in. Add bitters. Add lime juice, half of ginger beer and Spiced. Add ice half way up glass. Top glass up with ginger beer and garnish with a large sprig of mint

The 1808 Martini

The 1808 Martini Cocktail is short, but perfectly formed, this elegant tropical inspired cocktail will not disappoint you. It's like a French Martini, but with a twist. A Barely Legal twist.

Ingredients: 40ml 1808 Barely Legal // 40ml pineapple juice // 20ml lemon juice // 15ml cherry syrup // Pineapple wedge // glace cherry // Ice cubes

How To Make: Pour all ingredients into a cocktail shaker. Add a cup of ice cubes. Shake hard for 10 seconds. Double strain into coupette or martini glass and garnish with pineapple cherry wedge.

Mai Tai 6525

The word ‘Maita’i’ is Polynesian for ‘out of this world’. Our version is just that.

Ingredients: 30ml 1808 Barely Legal // 15ml Spiced // 60ml Pineapple juice // 20ml Lime juice // 10ml Orgeat (or syrup) // 10ml Orange juice // Pineapple wedge // glace cherry // Ice cubes

How To Make: Add 1808, Pineapple juice, lime juice, orgeat, and orange juice to a cocktail shaker and fill with ice. Shake hard for 10 seconds. Strain into a rocks glass. If available add crushed ice to the top. Pour over 15ml Spiced. Garnish with pineapple cherry wedge.

Spiced Mint Julep

Tall, cold and refreshing this sweet and spicy variation on a classic will hit the spot on a hot summer day.

Ingredients: 60ml Spiced // 10ml vanilla syrup // Sprig of mint // Lots of crushed ice

How To Make: Clap 4 mint leaves together twice in your hand. Place in the metal half of a cocktail shaker. Add 10ml of vanilla syrup and 30ml of Spiced. Half fill with ice. Using a long spoon, churn a little. Add 30ml of Spiced. Fill with crushed ice. Churn a little more. Garnish with a large sprig of mint

The Propeller

If you love an espresso, but prefer a less sweet kick to your cocktail this is a more sophisticated variation on a classic.

Ingredients: 60ml 1808 Barely Legal // 5ml vanilla syrup // 5ml maple syrup // 1 shot of espresso // Ice cubes // 3 coffee beans

How To Make: Pour all ingredients into a cocktail shaker. Add ice cubes. Shake hard for 10 seconds. Double strain into an ice cold coupette or martini glass. Garnish with the 3 coffee beans in the shape of a propeller.
