The Illegal Tender Rum Co

From 1787, and for the first three decades of Australia’s history, rum was an unofficial form of tender in Australia. However, in 1808 the Governor of New South Wales, William Bligh, ordered that rum be made an 'illegal tender'.

Our name and our spirits pay tribute to that time in Australian history and our 230 year love affair with rum.

Our premium spirits are lovingly crafted, by Head Distiller Codie Palmer, in small batches using only high quality Australian ingredients. 

We're very proud of the international acclaim we've received so far with ten medals in less than two years.

We are passionate about producing the best spirits we can and believe you can't cut corners on quality. So, to make our award-winning smooth, premium rum we use only dark brown cane sugar. This is unusual because it is a much more expensive ingredient.  Most other rums are distilled from cheaper, sour and harsher tasting molasses. 

all our she spirits are distilled twice at our purpose built distillery in Dongara, Western Australia.

The fresh tasting '1808 Barely Legal' is bottled straight way, and the 'Spiced' is mellowed for a while in Ex-Shiraz French Oak barrels (from a famous Margaret River winemaker) to infuse that traditional charred oak colouring and flavour. The Spiced is then spiced with twenty botanicals, including native Australian bush tucker: Kakadu Plum, Lemon Myrtle, Quandong, Wild Rosella and Wattleseed. These high quality ingredients all blend beautifully to create a pure palate of flavour, a uniquely Australian taste and a premium quality spirit.

Our soon to be released 'Rum' is aged for at least two years in medium charred, re-coopered Ex-Shiraz French Oak barrels.

Whichever spirit you choose, the result is a naturally sweet and smooth spirit, that can be enjoyed on its own over ice, with your favourite mixer, or as a special base to your favourite rum cocktail.



Our 35%ABV Spiced spirit is aged in Ex-Shiraz French Oak barrels (from a famous Margaret River winemaker) to infuse that traditional charred oak colouring. The aged Spiced has been awarded a Bronze at the IWSC in 2017, Silver and Platinum at the SIP in 2017, and a Gold medal at the 2017 Chinese Wine and Spirit Awards.

1808 Barely Legal

The 40% ABV 1808 Barely Legal is fresh, fragrant and slightly higher in alcohol content. 1808 received the award of a Bronze medal at the 2017 San Francisco World Spirits Competition, a Silver medal at the 2017 International Wine & Spirit Competition, and a Gold medal at the 2017 Chinese Wine and Spirit Awards.

Distillers' Cut

At 45% ABV it is certain to be the smoothest Rum you will ever have the pleasure to SIP.
A sophisticated spirit that entertains your palate, with distinct cane flavours ranging from brown sugar to a buttery crème Brule. A light bite on the back of the throat indicates the shiraz cask used for ageing, which pronounces that you are in fact drinking a barrel aged Rum.
